Cardine's Green Chile Enchiladas

Cardine's Green Chile Enchiladas
Serves approximately 10 people
Preheat oven to 350 degrees Fahrenheit

Flour tortillas (approximately 10)
15 oz can black beans
16 oz bottle Herdez Salsa Verde
16 oz block of Jack Cheese, shredded
1 small can of chopped green chiles
2 or 3 large chicken breasts
2 Tbsp oil or lard (hee hee)

Cut chicken breasteses into small pieces, removing excess fat. In a frying pan and on medium heat, fry chicken in oil until thoroughly cooked. In each tortilla, spoon in beans, salsa verde, and green chiles. Sprinkle on chicken and cheese. Roll and place in a 9 x 13 inch casserole dish. You can squish about 10 tortillas in the pan if you need to feed that many people. Spread Herdez Salsa Verde on top of the enchiladas and sprinkle with cheese. Put pan in oven and cook until cheese has thoroughly melted and the juices are bubbling.

I suggest serving this dish with a green side salad, chips, salsa and/or guacamole, lime wedges, and Jarritos Mandarina. For dessert, try Jello brand flaun!

Is this the recipe for the enchiladas we had on Halloween? Did you substitute anything for the chicken when you made them, or did you just leave out the chicken? Again, I really enjoyed the enchiladas!! Yummy! Had a lot of fun Halloween night, thanks again for hosting the evening. :)

Julie, Yes, in fact, this is the recipe I used for the Halloween enchiladas, only I didn't put in the chicken or green chiles. I used extra cheese, instead. Oh yeah, and I used the muenster ("monster") cheese, instead of monterrey jack cheese.

What type of goat cheese did you use for your dish? Can you get it at almost any store?

Awesome that you got "Snape!" I, too, like Snape. Great character.

I love that Herdez Salsa Verde. I use it to make a great shredded pork and I used it in a Green Chicken Chili.

Why did you leave out the chicken and chilies for Halloween?

I left out the chicken because they were for a potluck meal, and I was afraid there would be too much meat.

I left out the chiles because I couldn't find the can I thought I had purchased. I must not have purchased any.

They were still good.
