Month of Bacon: Bacon Corn Muffins

This next recipe is from Michelle. She found this recipe at cooks.com, and this actually doesn't fit any of the categories from my poll. I just figured that nobody would want a bread recipe! More recipes coming soon, and I also have a great photo to post from my trip to Mexico.

So I haven't actually made it before, but I found it. Sounds interesting.

Bacon Corn Muffins

1 c. all-purpose flour, sifted
1/4 cup sugar
1 tsp. baking powder
1/2 teaspoon baking soda
1 tsp. salt
1 c. cornmeal
1 egg
1 c. buttermilk
2 tbsp. butter, melted
4 slices bacon, diced, slightly cooked

Combine dry ingredients and stir in cornmeal. Beat egg slightly add buttermilk and melted butter. Mix liquid and dry ingredients and stir only to combine. Fill greased muffin tins two-thirds full. Sprinkle with diced bacon. Bake at 425 degrees Fahrenheit for 15 minutes.

Mmm. This sounds yummy and easy to make!

Someday, if I ever go grocery shopping again, I'm going to make one of these bacon recipes!
