Month of Bacon:Spinach Bacon Quiche

Ah, perfect. A breakfast recipe. Or brunch. Or elevensies. Or whatever. This one was provided by the wonderful banana, who very infrequently updates her recipe blog. And while she does it infrequently, she does it well. There are some real jewels in her recipes. If you haven't checked it out, you should.

Spinach-Bacon Quiche

1 bag frozen spinach
6-8 strips bacon
1 medium onion, diced
5 eggs
2 cups half-and-half
½ cup grated cheddar cheese
Salt and Pepper

Cook bacon until crisp, crumble. Saute onion in cooking oil on medium heat for 5 minutes. Add spinach and continue to saute until spinach is thawed. Drain excess water. Place spinach, onions and cheese in the bottom of a 9 inch pie dish. Beat together eggs and half-and-half. Add salt and pepper, to taste and continue to beat just until well blended. Pour egg into pie dish and bake at 400 degrees until knife inserted into the quiche comes out clean, about 40 minutes.

Notes: This is a crustless quiche. You can also put a pie crust in the bottom of the pie dish and bake the same way. The half-and-half can be replaced with canned milk or cream.

I might have to make this very soon. It looks so good! You had me at bacon.

I'm really enjoying your month of bacon! It inspired me to go buy the real stuff not the turkey bacon I usually eat. :)
