Ack! It's the last day of November! I still need to post some recipes! Oops! Okay, so here are:
Cardine's Mom's Sour Cream Enchiladas
3 dozen corn tortillas
2 cans cream of mushroom (or chicken or what pleases you) soup
1 pint sour cream
8 oz green chiles (put in blender)
1 can water
Put in saucepan and bring to boiling point, but don't boil it. Let cool. Dip tortillas in sauce, and fill with:
1 onion, chopped (saute it if you want)
Other optional items, such as meat or olives
Roll and place in 3 9x13 pans. Pour remaining sauce over top. Sprinkle with cheese. Put in the oven at 350 for about 20 min.
Cardine says: As you can tell, I have a large family. We really probably did go through three casserole dishes full of enchiladas sometimes.
