Month of Bacon: Green Beans Y'all Won't Believe

dub sent me the first bacon recipe. Let this be a shining example to you all to send me bacon recipes. cardinesblog with the at sign and then gmail.com.

dub says:

Here's a recipe that I like that has bacon in it. I made it once in Memphis for Thanksgiving and it was WOW! Then I made it once in [other city] and it was so-so. Maybe it needs the Southern humidity....?

Green Beans Y'all Won't Believe
(Adapted from the recipe book "A Sterling Collection: The Best of the Junior League of Memphis")

Ingredients
1 ½ - 2 lb. fresh green beans (or can use canned or frozen)
10 slices bacon
6 tablespoons sugar
6 tablespoons vinegar
¼ - ½ cup toasted slivered almond

Directions
Remove both ends of beans, break in half, and wash thoroughly.
Place in a large pot and add water 3 to 4 inches from the top. Cook until tender.
Drain beans and set aside.
In a large skillet cook bacon until crisp.
Remove bacon, drain and crumble reserving drippings in skillet.
Stir sugar and vinegar into drippings and heat and stir until sugar is dissolved.
In a 1 ½ quart casserole, layer half of the beans, half of the bacon and half of the almonds.
Repeat layering.
Pour dripping mixture over all and bake 45 minutes at 350 degrees or until heated through.

I don't know about all y'all, but this sounds really good to me!

Sounds pretty good to me, too. Candleman has been on a health kick lately so I know he wouldn't try them. Maybe I can try this recipe for Thanksgiving.

I can't think of any bacon recipes I have. I do remember when we were kids my mother made us the best Roman Meal muffins using a whole cup of bacon grease. Can you even imagine?! In those days we didn't think anything of it and it was a good way to use those left over drippings.

Sounds delicious. The dish might be tasty if you steamed or blanched the green beans instead of boiling them.

The bacon recipes we use most are simple but great. Breakfast burritos and Guacamole Burgers. Yum.

I love the mix of healthy vegetables with bacon! It makes up for the not-so-healthy-ness of bacon. This one sounds yummy!
